Listed below are the TWELVE selections that make up the Premiere Menu. You may order as many or as few items as you like. For instance, if you order four items such as Etouffee, Chicken Creole, Jambalaya and Bayou Steak then your plate will be filled with each item taking up one quarter of the plate. You could also devote your entire order to just one item or as many as twelve. Your food will be seasoned to your taste also. You may order it Hot or Not- hence the name. Where food is already seasoned it is indicated so. We are sure you will enjoy this cuisine as much as we have enjoyed bringing Louisiana Cajun to you, as well as our top entertainers. Enjoy!
LOUISIANA CAJUN
ETOUFFEE	A spicy Cajun specialty with crawfish tail meat, scallions, green onions, celery, onions, and green peppers over rice. (Spiced Medium)

GUMBO	Made with alligator sausage and real crabmeat - a mildly spiced recipe brought back from Breaux Bridge, LA ... over rice (Spiced mild to medium)

CHICKEN CREOLE	Chunks of chicken simmered on our delicious Creole sauce...with rice (Spiced medium)

JAMBALAYA	A variety of sausage and roast pork baked in a casserole with rice, onions, peppers and celery (Spiced mild)

NEW ORLEANS RED BEANS 'N RICE	Cooked all day - tasty and full of fire (Spiced HOT)
AMERICAN FARE
ALLIGATOR SAUSAGE	Smoked with tail meat. Lean and very delicious! (Spiced mild)

ROAST PORK W/KRAUT	Tender chunks of roast pork simmered in Kraut and natural stocks.

BAKED WHITE FISH	With lemon pepper seasonings and baked with a drizzle of butter.

SWEDISH MEATBALLS	Lean ground meat simmered in a medium roux.

BAYOU STEAK	Chunks of steak sautéed with green peppers, onions... served over rice.

FRESH VEGETABLE MEDLEY	Hand cut broccoli, cauliflower and carrots flash sautéed with our special spice mix.

PARMESAN'D POTATOES	Texas potato slices, deep fried and sprinkled with our original parmesan spice mix.
